Jill Ramsier, co-owner of Quantum Leap Winery, and Lisa Wilk, founder of Orlando Uncorked, are offering a class called Wine and Chocolate Perfectly Paired that will be held from 7 to 9 p.m. on Wednesday, February 12 at Quantum Leap Winery, Orlando’s first and only winery.
Ramsier, a seasoned marketing executive who spent more than 12 years in the restaurant industry before making the full leap into the world of wine, is excited to share how wines are produced at Quantum Leap, the specific characteristics of each of the wines and how different flavors in the wine are brought out after the chocolate is introduced.
“We feel like the timing of this class couldn’t be better -- two days before Valentine’s Day,” said Ramsier. “Our class experience will allow participants to taste through some of our wine portfolio while they enjoy paired chocolate items that best showcase both the wine and the sweets.”
The duo will walk through six delicious pairings of Quantum Leap wine and chocolate from Peterbrooke Chocolatier of Winter Park.
Wilk, a local wine educator and wine and food writer, also describes herself as an all-around passionate foodie and sommelier. She became seriously involved with wine in 2002 when she started a chapter of Wine Brats with two friends from Darden. In 2004 she started Orlando Uncorked to continue with wine events and education and to give back to local nonprofits. Wilk also taught at the Winter Park Lifelong Learning Institute and developed sit down wine classes. In 2013 she began a food and lifestyle blog that covers food, wine, craft beers and restaurants.
“Class attendees will learn more about Peterbrooke Chocolate and a bit of Chocolate 101 so they better understand the principles of pairing chocolate and wine and the synergy of the two delights,” said Wilk.

Quantum Leap Winery opened in October 2012 as Orlando’s first winery, offering a wine tasting room and venue for events. It operates on a business philosophy of sustainable production.
Jill Ramsier, a former food and beverage executive, and David Forrester, a successful CEO and environmental industry pioneer, work with small producers in premier wine-growing regions around the world to obtain sustainably grown wine. The wine is then transported to Quantum Leap where it is stored, finished, blended and packaged. The evolution of the winery will include packaging its wine in kegs, pouches or boxes, reducing the carbon footprint associated with traditional wine production.
