Recipe: Martie Salt's turkey a la king

"My Mom always made her Turkey a la King recipe the day after Thanksgiving for as long as I can remember."

Serves about 6

INGREDIENTS

  • 3 cups milk
  • 1/2 cup flour
  • 1/2 stick butter or margarine
  • 1 egg yolk
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 1/2 chopped green pepper
  • 1/2 chopped onion
  • Small jar pimentos
  • 2 cups diced turkey
  • Six slices of toast or Hungry Jack biscuits

INSTRUCTIONS

  1. Melt butter in saucepan and gradually add flour, stirring well.  Slowly add milk and egg yolk. Stir until thick. In a separate pan, sauté green pepper and onion.
  2. Add turkey to milk and flour mixture. Let simmer about ten minutes. Add green peppers, onion, pimento, salt and pepper.
  3. Serve over a slice of toast or a biscuit.
